Sunrock Cabernet Sauvignon
Luscious cassis and dark cherry aromas accentuate delicate hints of cigarbox, dark chocolate and vanilla smoke that permeate out of the glass. The wine has firm and full tannins that are smooth and delicate. The backbone of bright acidity and mouth filling tannins will allow this wine to age spectacularly while also making it perfectly enjoyable at the present time.
Winemaker Notes
The grapes were crushed the day they were picked to preserve freshness. Fermented in open-top tanks and manually punched down to allow for more intense flavour extraction. After primary fermentation, the wine went through secondary fermentation (Malolactic) in barrel. The wine was then aged in a blend of French and American Oak until maturity and then filtered and bottled.
Food Pairing
Try with braised beef short ribs, lamb shanks, and grilled ribeye steaks. This wine is also a great match for a chocolate dessert.

Sunrock Shiraz
Rich aromas of dark cherries, smoky vanilla, and some earthiness. Flavours of blackberries, baking spices, dark chocolate and vanilla fill the palate. The tannins and acid are soft and the finish is long and pleasurable.
Winemaker Notes
The grapes came in looking great, they were crushed and destemmed and then fermented in stainless steel tanks for 14 days before being pressed off the skins. The wine then went through malolactic fermentation and was then placed into specially selected American and French oak barrels to age for 16 months. The barrels were topped regularly until the time came to empty them for bottling.
Food Pairing
This bold and flavourful wine can stand up to many varieties of meat and exotic flavours, try it with leg of lamb or Morrocan cuisine. This peppery Shiraz is also a lovely complement to richly flavoured cheeses, such as asiago, blue cheese and aged cheddar.

Sunrock Red Meritage
The Red Meritage has rich aromas of dark stone fruits, plums, cassis, and smooth luscious oak. The palate has flavours of baking spices, dark plums, dark cherries, mocha, and vanilla notes. The tannins are firm but approachable and the acid is soft. The finish is long with the flavours persisting long after the last sip.
Winemaker Notes
The grapes were picked at peak flavour ripeness and gently crushed and destemmed into stainless steel tanks and pumped over twice daily for 2 weeks. The wine then went through malolactic fermentation and then was blended together. It was then aged in a specially selected blend of French and American Oak barrels for 15 months. 80% Merlot and 15% Cab Sauvignon, 5% Cabernet Franc.
Food Pairing
This full-bodied wine has elegant structure and versatility. It is perfect when served with classics such as roast beef or pork, broiled lamb chops, braised venison, and rich stews; try it with chicken enchiladas in classic Molé, or spaghetti Bolognese.

Sunrock Illumina
This red blend has an abundance of blackberries, dark cherries, vanilla mocha, baking spices, and dark fruit jamminess on the nose. The palate has juicy dark fruits, a luscious note of spice and vanilla and some smooth smoky oak. The tannins and acid are soft and the finish is long and pleasant.
Winemaker Notes
The grapes were picked right before frost set in to allow for maximum ripeness to develop in the vineyard. The grapes were gently crushed and destemmed and then fermented in an open top stainless steel fermentation tank. The wine was punched down 2 times daily for 2 weeks, after which the wine underwent Malolactic fermentation. It was then transferred to specially selected French and American oak barrels and allowed to age for 16 months. 67.5% Syrah, 32.5% Zinfandel.
Food Pairing
Pairs great with barbecued steak with a smoky char, as will lamb, venison and game birds. Accompany a dish with a fruit-based sauce or marinade for a beautiful pairing. This wine is also a perfect match for a charcuterie board.
